Gran Moravia cheese is an aged cheese produced following the oldest Italian tradition that comes from the production of traditional Italian aged cheeses such as Parmigiano Reggiano (Parmesan) and Grana Padano with traditional copper vats, in the faboulous region of Moravia. It is long-aged in Italy, where Brazzale’s skilled staff takes care of the wheels for months and then packaged in the up-to-date Packaging Dept. located in Zanè (VI), Italy.
Milk used to produce Gran Moravia aged cheese comes from the farms that belong to the Gran Moravia Eco-Sustainable Chain. The whole chain is traceable and certified by DNV, according to UNI EN ISO 22005:2008. The supply chain consists of a network of more than 80 farms, directly coordinated by Brazzale technical staff. This network counts more than 90.000 hectares of cultivated lands and almost 19.000 dairy cows: 5 hectares of ground for each cow and the highest animal welfare standards.
The unvaluable know-how of Italian cheese makers was blended to the extraordinary quality of the Czech milk and to the implementation of an innovative supply chain, to create a hard cheese which is at the same time convenient, environment-friendly and delicious.
